Prawn Pasta with Lemon Butter Sauce

Cook Meter: Amateur

Recently I have found myself busy. Busy with work, life, study, my family.  I sound like everyone else these days, overloaded with too much to do and wishing there were a few more hours in the day.

Getting home after a long day, the last thing I want to do is spend time slaving in the kitchen. So when I have a millions things to do in the afternoon I will usually cook this meal. It takes 10 minutes from start to finish (the time it takes to cook the spaghetti).

Adapted from one of Donna Hays quick meals it has now become a family favourite. Cutting prawns through the middle, makes the deveining process easier and speeds up the cooking time.  The amount below usually serves about 3 people.

200g of uncooked prawns halved through the length, deveined
50g of butter
4 cloves of garlic
1tsp chilli flakes
Zest and juice of one lemon
Handful of parsley
Salt and pepper

1. Cook your spaghetti as you normally would, to check if it is cooked grab a piece and cut it in half, look at the intersection of the piece you should see a small dot of white in the centre for it to be just  cooked.

2. While this is cooking, put a large frypan on a medium heat and add the butter so that it melts.  Add the slices of garlic, lemon zest and chilli flakes. Make sure you do not brown the garlic.

3. Add the prawns and cook till pink and opaque, it should only take 2-3 minutes.

4. Add the lemon juice, spaghetti,  and parsley, the salt and pepper to taste.

That's it. Nothing to it.
