Sticky Banana Pudding with Toffee sauce

So here is the recipe from Stacey and the Blushing Tea Cup.  It was a really easy recipe to put together with most ingredients that I had in the kitchen already.

Oh and Stacey warned me that it was an incredibly rich dessert and to not have too much. Did I listen... No. So yes, I have a very sore belly but I also feel ridiculously good.

4 or 5 bananas. They don't have to be ripe, any kind will do.
125gms butter
3/4 cup sugar
2 eggs
150ml of hot water
1 tsp baking soda
1 cup of self raising flour
Sauce:75gms of butter
3 cups of loosely packed brown sugar
300ml of cream
1 tsp vanilla

  1. Grease pie dish.
  2. Slice 2 or 3 bananas and line the bottom with the pieces. (Make sure there are 2 left)
  3. Into a food processor put the butter and sugar and cream together.
    Add the eggs.
  4. Mix together the hot water and baking soda in a cup then add to the food processor.
  5. Mash the last 2 bananas and add them and the self raising flour to the mixture. Mix until combined. Pour mixture over the bananas in the dish.
  6. Bake for 35mins in a moderate oven.
  7. Put all the sauce ingredients into a pot and bring to the boil.
  8. Tip 1/4 cup of the sauce over pudding and return to the oven again for a few minutes so it all soaks through.
Serve with ice cream and sauce poured over. Delish!! Be warned in it is very very rich, but very, very amazing. The best thing about this pudding is you can make the cake in advance, and when it's time to eat, just make the sauce, heat the cake through with a bit of sauce and serve.
