Not So Boring Breakfast: Baked Eggs with Chorizo

I own alot of cookbooks.  They have their own cupboard in our kitchen, are hiding under our coffee table, our bed, and secret cupboard in my wardrobe.  Problem is that I buy these books, and then after looking through them I never actually cook anything from within their glossy pages.

Today I decided to cook a recipe that I have been wanting to try for a while. A combination of some of my favourite flavours.  And not only that but something that you can have for breakfast..or lunch....or dinner!  These beautiful baked eggs are cooked with chorizo, asparagus, peas and a lovely tomato sauce.  I server it with yummy fresh toast and cooked the eggs so they were still runny.

400g can diced tomatoes
1 brown onion
3 cloves garlic
1 bunch of asparagus

1/2 cup frozen peas
300g chorizo sausage
4 eggs
Salt and Pepper
