Happy Valentines Day - Love Cupcakes

This is my last Valentines Day as a Henry, a not so single woman.  In fact in about 3 weeks time I will be someone's wife, have some other name, be some other person.  I don't know if all impending brides go through this but the whole name change thing has really stopped and made me think about where I come from, who I am, and what it is that makes me, me. 

A large part of what defines me is my passions and my love to cook. Although my name will be different, it won't stop me from pulling out the bakings trays and slipping something in the oven for my sweet-tooth boy.

So today I'm making Valentines Day Love Cupcakes.  Don't worry nothing tricky here, just a standard cupcake in a pink love heart theme. I've decided to think about my name change and marriage like these cupcakes. Mel Henry is the cupcake, the foundation of the recipe and my new last name Whelan is just the icing on the top. Enjoy everyone and hopefully you get to share Valentines Day with someone you love as well.

Cupcakes: (Edmonds cookbook recipe)
125 grams butter
3/4 cup caster sugar
1 tsp vanilla essense
2 eggs
1 cup plain flour
1/2 cup milk
1/4 tsp red food colouring

Filling and Icing:
Strawberry Jam
2 cups Icing sugar
1 1/2 tbsp butter (melted)
1/2 tsp vanilla essence
1/4 tsp salt
3 tbsp milk
1/4 tsp red food colouring

Method:
  1. Preheat oven to 190 degrees celsius.
  2. Cream together butter and sugar until it has lightened in colour and is fluffy, then mix in vanilla.
  3. Beat in eggs, one at a time, making sure that they are well mixed.
  4. Sift together flour and baking powder and fold into mixture.
  5. Stir in the milk and add the food colouring.
  6. Split the mixture between 12 cupcakes wrappers in a patty tin.
  7. Cook for 15 minutes, check by inserting a skewer, making sure it comes out clean.
  8. Leave to cool on a wire rack.
  9. Once cool scoop out a hole in the top of each cupcake like a pocket.
  10. Spoon in a teaspoon of strawberry jam.
  11. Place all icing ingredients together and mix until smooth.
  12. Put icing into a piping bag and pipe on top.
  13. Sprinkle with your favourite heart shaped lollies.
  14. Give to your loved ones.
