Something Easy: Beef Fajitas

There are so many nights when I come back from the gym and the last thing I want to do is go to the supermarket, or cook dinner. In fact most nights are like this and I spend every night debating the pros and cons of just popping down to the shops and getting take-out.

When you feel like this, make beef fajitas. They take literally 5 mins to cook, 10 to prepare if you are a whizz with a grater and a knife.

Beef Fajitas:

2 steaks (up to you what quality, I usually go for something on special)
2 capsicums of different colour
1 red onion

1 clove of garlic
3 tablespoons of soy sauce
2 Sliced red chillis
1 tsp Paprika
1 tsp ground coriander
2 tsp ground cumin seeds

A set of wraps
Salad vegetables


1.  Slice your steak, I prefer mine quite thin but its up to you.

2.  If you have time marinate your meat, if not toss your meat in your marinate and set aside.

3. Slice the red onion and capiscum.

4. Prepare your salad vegetables.

5. Heat your fry pan to a high heat and tip, your meat, marinate and capsicum and onion in and pan fry for five minutes. I like my meat on the rare to medium rare and my vegetables still a tad crispy. If you want to cook it for longer go ahead.

6. Heat the tortillas and stack them with your salad vegetables, top with your fajita mix and add some sourcream if you wish.
