Crunchy Asian Chicken Salad

So I made a pledge to myself on Monday to start to be a bit healthier in preparation for my Food Safari. I think I may have misled you all when I said that the meals that I cook for the next month are going to be healthy. They are going to be good for you, but "healthy" on my terms. Which for me means, still tasty, and therefore probably NOT that good for you if you took out the calorie scales and really gave them a test.

Crunchy Asian Chicken Salad

It's like the "health tick" approved meals at MacDonalds. Compared to everything else on Bread And Sniff It, these recipes will probably be healthiest meals you will find.

So let me start with my favourite "tastes great guilt free" meal. It's full of colour, texture, vibrancy and taste. It's a recipe that you can smell as you walk into the house before you reach the kitchen. And it's a meal that Nick will sneakily eat the leftovers from out of the bowl while I'm not looking.

Marinating Chicken

I actually got the recipe for this Dressing/marinade from Weightwatchers when I joined about 3 years ago. In fact I pretty much joined the online club so that I could steal all of the under 4 point recipes and then didnt bother doing anything after that. This one is one that I cook regularly even 3 years later.

I have chosen these vegetables because I love the flavours and the colours, but you can substitute for any that you want, its up to you.

600g of chicken
2 tbsp olive oil
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp Chinese Five Spice
1 tbsp of brown sugar
2 cloves of garlic (crushed)
1 chilli ( I used 2 you already know that I'm addicted to chilli)

Salad vegies :
4 spring onions
1/4 chopped red cabbage
1/2 punnet of cherry tomatoes
1/2 cucumber sliced
1/2 a bunch of coriander

Add these for extra flavour and texture, but if you want a truly healthy meal omit. Seriously though do not leave these out!

1 packet of Crispy noodles
1 handful of unsalted cashews or peanuts

1. Combine half of the oil, soy sauce, oyster sauce and five spice in a bowl.
2. Slice chicken however you like, I prefer long strips and marinate in the above, for half an hour.
3. Combine the rest of the oil, soy and oyster with the brown sugar and set aside for a dressing.
4. Chop up all of the salad vegetables and place in a bowl.
5. Saute the garlic and chilli in a frypan on a medium heat and add chicken. Once cooked set aside.
6. Add the dressing to the salad and just before plating mix in the crispy noodles. They will go soft if you have them in there for too long.
7. Serve the salad, with chicken on top and garnish with roughly chopped nuts and extra coriander.


  1. This sounds great, and definitely a healthy type of meal! With chicken, nuts vegetables (and of course cilantro) it is a well rounded meal with the right amount of protein (which I feel is missing from most "healthy" dishes). I am excited to hear about your food safari, I would love to go too!
