Simple Seafood Salad

I love meals that take 15 minutes to cook but make people believe that they have taken forever. I also love meals that give the impression of being a little fancy when all you really did is chuck everything in a bowl.

This is one of those meals.

Simple Seafood Salad
I cook it for Nick and I when we want to have a really nice dinner without feeling full to the brim afterwards. It has garlic aioli in it, but I don't make it myself, cause like I said its really easy.
So cook this for yourself on a weeknight. Its also light enough that you can serve to a few people as an entree if you like.

300g salmon fillet
300g raw prawns
1 avocado
half a red onion
bag of spinach (my cousin told me to always use spinach instead of lettuce in salads for its nutritional value, and it tastes great)
1 punnet of cherry tomatoes


Preheat your oven to 180 degrees Celcius.
Season the salmon and bake in the oven for 10 minutes.
While the salmon is cooking do the following: Slice avocado, red onion and cherry tomatoes and combine with spinach in a bowl, season with salt and pepper

Take 4 tbls of Garlic Aioli, (I use Paul Newmans whole egg aioli, its my favourite) mix with water so that it is the consistency of a dressing.
Heat a non stick pan. Place prawns in the pan and cook for 2-3 minutes until opaque, turning once.
Remove Salmon from the oven and slice into chunks.
Add salmon, prawns and aioli dressing to the bowl, combine, until ingredients are coated in dressing
Serve with cracked pepper and a wedge of lemon, if you have a partner like mine, you might want to add some pieces of crusty white bread.
