My Stepdad is the King of Mexico. Ok so not the actual king of Mexico. He is however the king of mexican food. Not too long ago, before I started this food blog and started harrassing my Mum for all of my favourite recipes, he sent me this recipe for his guacamole.
I know most people know how to make guacamole, but there are some of you, you know I'm talking to you, who are still buying it in a Masterfoods jar. For everyone else, try making this recipe. The best part about it is that all the additional ingredients just add to the avocado, not distract from it.
My Stepdad specifically told me and I quote, "Do not vary ingredients, not even a little. Avos have to be perfect." Me being a know-it-all didn't listen to him, I tried to be a bit more instinctual with the measurements. It was a mistake, too lemony, too spicy, just not right.
Round 2 I copied it EXACTLY. It was perfection. So for this weekend instead of buying a container of dip from the super market, get these ingredients and be the envy of your friends at your Saturday arvo drinks.
1 Avo roughly chopped in bowl
1 clove garlic crushed
quarter of 1 medium red oinon
1 teaspoon of hot old el paso chilli sauce
2 teaspoons of sour cream
juice half lemon
half teaspoon salt
ground black pepper
1 ripe tomato roughly chopped
Stir all ingredients in bowl with avo (DO NOT BLEND) and enjoy with corn chips and cold VB.
